sockeye is the most sought-after salmon species, known for its rich flavour, firm meat and high oil content. it has the reddest flesh of all wild salmon with cooked meat remaining red in color. the sockeye from the nass river have a little less fat than the skeena river sockeye, perhaps due to the shorter run upriver.
